How it began

In 2020, on the iconic Sant Josep road, Joan and María Marí decided to transform an old country house into something more than a restaurant: an open home for those seeking the true cuisine of Ibiza. Five years on, KM1 remains that place where time stops between carefully crafted dishes and conversations that stretch into the last glass.

The founders

Joan Marí, chef and owner, was born and raised in Sant Josep. Before founding KM1 he worked in the most demanding kitchens of Barcelona, San Sebastián and Copenhagen. María Tur, sommelier and co-founder, has turned the cellar into a tribute to Balearic and Mediterranean wines.

Six cooks, one family

The team

Behind every dish stands a team of six cooks trained in Ibizan tradition. Our sous-chef, Pere Roselló, has been with us since day one and is the silent guardian of the house's oldest recipes.

We cook with the recipes we learnt from our grandmothers: sofrit pagès, bullit de peix, borrida de rajada, octopus frita… while leaving room for creativity and the season. Each turning of the calendar partly rewrites our menu.

Local produce

The produce

Fresh fish each morning from Sant Antoni harbour, organic vegetables from Santa Gertrudis, olive oil from the Sant Mateu cooperative and wine from the island's wineries. All within a few-kilometre radius. That is what KM1 means to us.
